Let’s Talk Summer Salads
Sweet, tender leafy greens with ruffles and freckles, and spicy greens of arugula and mustard fill the front garden beds at Loring Schoolyard Garden. In other beds, pea tendrils are climbing their trellis and mingling with cucumbers, tomatoes, peppers and other delicious salad ingredients.
Toss Minnesota Strawberries from a Farmer’s Market or Berry Patch with Pea Pods, Sugar Snap Peas or plump shelling pea seeds. Toss in chopped mint, and dill sprigs.
For a Salad Dressing, Simply mash some berries with a fork, whisk in olive oil, juice of 1 lemon and a taste of honey; toss with Salad Greens.
Pinch off Basil, Arugula, Lavender, Nasturium and Cilantro flowers and toss into salads. Season Salad with coarse ground Salt and Pepper.
